From raw to cooked..
Paleo crustless quiche… Or whatever you call that.
1/2 cup cherry tomatoes
Um so apparently people like this one.. For those of you who need more detail about what I did keep reading:
First I cooked the bacon (about 200g) with half a red onion and about 4 mushrooms finely chopped.
While this was cooking I cut up half a punnet of cherry tomatoes, half a broccoli, a handful of spinach and a stalk/2 of spring onion/shallot.
I had roasted some pumpkin in the oven the night before.. Chopped into chunky but small pieces, so added 15 or so pieces in.
I put this all in a bowl, including the bacon mixture.. Mixed it all up and into the glass tray. I then cracked 12 eggs over.. And loosely stirred to ensure all was covered in egg. I did plan on using 10 but felt that wasn’t enough for the mixture.
I baked on 180C/350F for 15-20 minutes.. Or until it looked like the pic :)
If you want any more info just let me know. This is super easy, and you can add and remove things as you please according to your own tastes.
